Delicious Cream Of Cauliflower Soup

Fancy some yummy soup? Here is my favourite, very easy recipe which doesn’t take much work at all. It makes 4 large bowls, so halve the ingredients if you want less, or just keep it in the fridge and save yourself some time the next day!

2 cauliflowers
1.5 litre of water
4 vegetable stock cubes
Sour cream (dairy or vegan, your choice)
2 tablespoons of oil (I use olive oil, but any vegetable oil will work)
Salt to taste

Separate the florets and the stalk.

Wash the stalk and cut into rough cubes.

Put the cubes with the oil into a small pot and cover. Leave them to sweat. They will need 5-10 min (until the edges are light brown).


In the meantime, boil the water in a large pot and add the stock cubes. Mix well.

Add the florets to the stock. It doesn’t matter if the liquid doesn’t cover them all, the steam will soften them anyway. Cover the pot and leave for around 10 min.


Then take out the florets and leave them to cool off.

Add the stalk cubes to the stock (not the oil) and leave to simmer for 30-40 min.

Then I need to cool the liquid as my blender doesn’t like hot stuff. It’s quicker if you cool it in a pot standing in cold water in a sink.

Once cold, liquidise the florets and the liquid with the stalk cubes altogether (I need to do it in batches, I have a small blender).

When done, mix it in a large pot, heat it gently, fold in some cream. Add some salt to taste and it’s ready!

With very little effort, you have a delicious and healthy lunch or dinner.
